Knowing your plated cost.

Today I got a sheet of paper with all the portions for a Charcuterie Board for one of my restaurants that I help out. The plating guide 14 items on it at a food cost of $18.00 and a selling price of $25. When you have a Director of Procurement on your team to help you, ask them before you go live. In a four day span they sold 2. A $600 plus worth of product on a invoice has results of $50 in sales. Over paying for items and not knowing what the market will bring you will result in lots of waste.
