This weeks GM & KM meeting

I was able to have a department head meeting with four restaurants. In talking about utilizing me and having two restaurants that buy Lamb Racks. I found Frenched Grass feed New Zealand chef ready Lamb Racks for $1 cheaper per lb from Sysco. One chef is already buying them and doesn’t have to take a knife to them vs another brand from another vendor that he has to trim for more money per lb. A chef who doesn’t have Lamb Racks on his menu wanted to debate with me that Sysco was not as good as his meat supplier. The chef what was happy with them explained that they are beautiful and like them a lot. Just because you have a meat or seafood vendor, you may not always be getting a better quality product. I wanted to say “ nice yelp reviews” but I held my tongue.
